Covid Shrimp

Starring immune system-boosting ingredients such as turmeric, honey, ginger, garlic, and lime, this shrimp can be made mostly with pantry staples. What’s the story here? Stay home and stay alive people.

Directions:

Thaw, peel, and de-vein 1 pound of large shrimp. I like colossal, see chart below.

Mince together in food processor: two cloves of garlic (or 1 T jarred/minced), 1/2 small onion, 8-10 cherry tomatoes (or 1/2 cup canned chopped tomatoes)

In large shallow pan, saute minced vegetables in 2T extra virgin olive oil and 2T coconut olive oil until soft, 3 minutes.

Add juice of one lime (or 2T bottled lime juice), 1T of sesame oil, 1/4 cup white wine, dash soy sauce, 1 T fresh grated ginger (or jarred minced), drizzle of honey, sprinkle with powdered turmeric cook for one minute

Add shrimps to pan and cook on medium-high three-four minutes each side, use dash or two of white wine if needed to keep ingredients from sticking to the pan.

Serve with pan juices over whole grains.
